Symposium profile: The emphasis will be on novel technologies and most promising tendencies in malting and brewing, aiming at improvement of malt and beer quality in a practically feasible way. However, parallel to our continuing efforts of “moving science into practical solutions”, the focus of this symposium will be equally well on sustainability and, even more, on the challenge of integration of technological innovation, cost-efficiency, and environmentally friendly malt and beer production. From this point of view, the raw materials and major processing steps in malting and brewing will be treated and discussed, keeping in mind workable solutions for problems encountered in daily practice.
